Glycogen Packed Brownies...guilt free pleasure

Yes...These are super healthy and we love these as our post workout refuel/snack

CONSUMING CARBOHYDRATES AFTER WORKOUTS HELPS TO REPLENISH GLYCOGEN STORES – AKA MUSCLE ENERGY – THAT HAVE BEEN EMPTIED DUE TO YOUR WORKOUT. WHEN YOU REPLENISH, YOU FEED YOUR MUSCLES SO THEY CAN RECOVER AND GROW.

I am not shitting you...these are amazing taste, full of good nutrients and are super easy to make. We eat these everyday...cause they are healthy and we love chocolate...

So why are they full of nutrients and amaziness?

Well basically, without getting into a nutrition less...it is because of the simple ingredients...they are just that super awesome....

- 2 cups of sweet potatoes (glycogen rich...which your body needs for recovery after a big workout)

- 1 whole grated zucchini (these actually have protein, vitamins and adds moisture)

- 1/3 cup of Honey (good healthy stuff period)

- 1/2 cup of quinoa flour (healthy and can make your own using a grinder or blender)

- 1.5 tsp of baking powder

- 1/2 cup of 100% cocoa powder (we always end up putting more though)

STEPS

  1. Set oven to 415F.
  2. Bake 2 large sweet potatoes until they are soft, approximately 1 hour.  When the sweet potatoes have finished baking, allow them to cool to room temperature.
  3. Set oven to 350F.
  4. Grate the zucchini into a bowl and set aside.
  5. In a large mixing bowl, add sweet potato and mash.
  6. Add all of the remaining ingredients and thoroughly mix together.
  7. Evenly divide batter among the individual muffin pan.
  8. Bake in the oven for 30 minutes, or until you can insert a toothpick in the brownies and it comes out clear.

Healthy eating - Chickpea, walnut and banana bread

You know eating healthy is easy...but we for some reason make it hard on ourselves. Eating well is the corner stone of any good body, both mentally and physically. It is fuel...so fuel it well.

 

We have lots of dried chickpeas...and wondered what to do with it all. Cooking it takes a while and it tastes really bland. I decided to throw some in my high power blender, and blend the crap out of them....booom...pow...it got turned into high quality chickpea flour...

 

  • * did you know that chickpea if a good source of protein, high quality fiber with many minerals/vitamins *

 

So now that we have this high quality, nutritious flower...we got to work making stuff from pancakes to what we are talking about today...yummy banana bread to add to our breakfast (add honey, or maple syrup, egg, fruits, yogurt, morning oats...whatever you fancy....

 

We didn't follow an exact recipe for each amount...but here is ingredient list and amounts we kind of went by: 
- around 2 cups of chickpea flour (made my own with blender and dried chickpeas)
- 1/2 cup of walnuts (crushed it up a bit with blender)
- 3 mashed bananas
- 2 eggs (can do  vegan substitute for eggs) 
- 1/3 cup of honey
- 1tsp of baking powder
- cinnamon powder
- 2 table spoons of melted coconut oil
- Also added a bit of brown sugar (melted with coconut oil)

Mix together...put in greased muffin pan and bake until cooked...voila. Easy protein, high fiber with minerals/vitamins add on with your breakfast
